1.Directs and controls all subordinate staff to ensure that all day to day operational matters are handled on time and guest expectations are met
2.Provides guidance and assistance to the outlet employees helping them in the execution of their duties and responsibilities
3.Oversees the operational standards in the outlet ensuring that they conform to the requisite standards and meet or exceed expectations
4.Liases with the kitchen, bars, housekeeping, engineering and purchasing to ensure that the operation runs smoothly in areas of joint responsibility
5.Liases with chemical suppliers to ensure consistent quality of product and on-going training support
6.Prepares duty rosters, and implements vacation and public holiday schedules.
7.Monitors and controls the financial performance of the outlet controlling costs and expenses
8.Participates in the preparation of the outlet’s annual departmental budget as directed
9.Monitors and controls the hotel’s OE inventory, and schedules and co-ordinates inventory taking
10.Conducts frequent front and back of house checks ensuring mise-en-place, service procedures, standards of cleanliness and hygiene, repair and maintenance, employee grooming and manning levels are in order and takes appropriate action where necessary
11.Assists in the maintenance of efficient administration preparing and submitting reports on time as directed
12.Assists in the selection, training and evaluation of subordinate employee.
13.Coaches, counsels, disciplines and develops subordinate
14.Controls cleanliness of equipment and the hygiene standard of subordinates and is responsible for health and safety regulations.
15.Has complete knowledge of sanitation and hygiene regulations and HACCP policy.
16.Conducts a daily sanitation tour through the various departments and enforces actions where needed.
17.Controls general machine maintenance and ensures the repair and up keep of all kitchen and F&B equipment.
18.Controls cleanliness of the Back of house areas, and controls the overnight Stewarding Team
19.Enforces proper stocking and storing of resources in order to avoid unnecessary breakage and loss in all outlets.
20.Controls the proper separation of garbage. Checks on signs, and checks on items that can be salvaged.
