In conjunction with the Head Chef, prepares the menus, organizes purchases and updates the cooking instructions
Supervises purchasing for the restaurant, manages stocks
Send out the opening party invitations and start advertising opening night in social media.
Create seating chart and wait staff sections
Check the statuses of the licenses with the health department, the business license, liquor license and VAT
Set up the locked store system (expensive liquors, wines, etc)
Plans changes in the menu, sets prices and organizes the work for the day in coordination with the Chef
Negotiating and finalizing supplier contracts (Beverage, service area, marketing tools)
Design and create restaurant website and social media pages (FB, TA, etc.)
Finalize vendors for food and beverage products, and set up delivery schedules, prepare list of backup vendors
Establish house rules (breaks, staff dining, smoking, attitude of service, etiquette, dress code, etc.)
Finalize schedule of shifts for opening hours (staff rota)
Create customers’ list, VIP list
Set up communications between: back office and front office, POS and back office, hostess stations and reservation system
Develop procedures and policy for reservations, events and functions (booking, deposit, payment, discounts, changes and cancellations)
Start planning for operations (floor map, service method, etc.)
Deep clean and sanitize the kitchen, bar and service area
Action plan and Fixing responsibilities for each department head
Set up security service
Any ad-hoc tasks asigned by BOD.
Set up POS system and register for the training of management and service staff and create task visuals (pictures of menu items, procedure steps, etc.) for the kitchen staff
Find suppliers and contract for trash pick-up, grease removal, extermination services, laundry, appliance repair, fire extinguishers, music system, security alarms and security systems, window washing, and dishwasher service, determine emergency plans, exit procedures
Prepare invitation list for pre-opening parties and design/order invitations
Write up job descriptions for staff positions and create employee handbook, and prepare a training schedule for those who will be hired
Acquire entertainment permit, draft a list of potential entertainers
Checks inventories that have been carried out
Launches and deploys marketing initiatives in the local area in order to increase revenue
Walk-through with contractors to check progress
