About the Role
The Executive Chef is responsible for the overall success of daily kitchen operations at The Secret Côn Đảo. This role leads all culinary functions with a strong focus on food quality, creativity, cost control, hygiene standards, and team development, while delivering exceptional dining experiences aligned with the resort’s positioning.
Key Responsibilities
Culinary & Operations
Control food cost, labor cost, inventory, purchasing, storage, and kitchen equipment maintenance.
Personally supervise food preparation for daily operations and special events.
Drive culinary creativity, menu development, food presentation, and new culinary concepts aligned with market trends.
Ensure strict compliance with food safety, hygiene, sanitation, and local health regulations.
Lead and oversee all kitchen operations across the hotel, ensuring consistent high- quality food production.
Leadership & Team Management
Build a positive, disciplined, and collaborative kitchen culture.
Conduct performance appraisals and work closely with HR on recruitment, training, and disciplinary matters.
Lead, train, coach, and inspire the culinary team to achieve high performance.
Plan manpower, schedules, succession planning, and staff development programs.
Guest Experience
Interact with guests, handle feedback and complaints professionally, and continuously improve service performance.
Support upselling, cross- selling, and culinary- driven revenue initiatives.
Ensure guest satisfaction through exceptional food quality and service standards.
Business & Strategy
Manage kitchen budgets, P&L awareness, and cost optimization.
Align culinary strategy with the hotel’s vision and commercial objectives.
Identify new opportunities to enhance competitiveness and dining experiences.
Yêu cầu công việc
• A people person, a great communicator and trainer, able to build an attractive work environment and memorable staff and guest experiences
• Currently working as Executive Chef or Executive Sous Chef for 3 years+, international experience preferred
• Passionate about high quality food with an eye on the budget, good knowledge of food products in general, trends, costing and kitchen equipment
• Fluent in English, holding a Degree/ Diploma in Culinary Arts or equivalent
• Positive, forward thinking, creative, motivated, eager to learn, welcoming, professional, a fast learner and thinker with a sense of customer service, responsibility and humor
