Kitchen Operations
• Ensure consistency in food quality, portioning, and presentation.
• Maintain high levels of cleanliness and organisation.
• Oversee daily prep and service across kitchen sections.
Team Support
• Support with rota planning and staff development.
• Supervise and train junior chefs, apprentices and porters.
• Lead the team during shifts and deputise for the Head Chef.
Food Safety & Hygiene
• Maintain records and ensure full compliance with environmental health standards.
• Enforce food safety, allergen, and HACCP procedures.
• Conduct checks and coach staff on hygiene practices.
Stock & Cost Control
• Assist with ordering and supplier coordination.
• Monitor kitchen costs in line with budget targets.
• Support stock rotation, portion control and minimising waste.
Yêu cầu công việc
• Experience in private members’ clubs or luxury environments is a plus.
• Calm and effective under pressure.
• Commitment to consistency, creativity and team development.
• Minimum 3 years’ experience as a sous chef or in a similar role in a high- end kitchen.
• Strong leadership and training skills.
• Excellent knowledge of culinary techniques, food safety, and kitchen management.
