Attend Head of Department and Operations meetings in the absence of the Executive Chef.
Supervise kitchen staff to ensure compliance with policies and procedures, and take corrective actions when necessary.
Ensure the availability and quality of ingredients, equipment, and kitchen tools.
Assist the Executive Chef in enforcing discipline, training, and recruiting new team members.
Order and purchase food items as required, ensuring efficiency and minimizing waste.
Control the quality and quantity of food to meet the requirements of the restaurant, hotel, and kitchen operations.
Stay updated on hotel promotions and special events.
Manage food transportation, payroll forecasting, and verify timekeeping records for accuracy.
Ensure each section maintains proper quality, quantity, and storage control.
Minimize food and material waste to the lowest possible level.
Ensure compliance with all food surteous attitude toward staff, management, and guests.
Support hotel operational departments to ensure efficient service delivery.
Continuously check the quality and quantity of food leaving the kitchen.
