To perform all types of food preparation in good production and performance. Guideline for staff communication and hygiene.

DUTIES AND RESPONSIBILITIES
Keeps file of standard recipes and ensures adherence to the recipes.
Maintain good relations with management.
Maintain the quality and presentation for all cold food and for any food event in other kitchen areas.
Working time according to his duty roster ant to be flexible.
To coordinate with ice carving Chef de Parties for all functions.
Coordinate with Executive Chef for all menu, carte and promotion with cold items product.
Control and handle all equipment in accordance with safety procedure and coordinate with engineering for repairing.
Sets up training programme and conducts classes in regard to preparation, and standards for all cold food.
Creativity for all menu suggestion in cold food section.
Maintain discipline and grooming in his kitchen.
Sets up daily mise- en- place and rotation for food handling.
Check all order food requested or ordered on a daily basis.
Keeps all assigned areas clean and in sanitary condition during his duty.
Training the staff for any procedures in cold kitchen.
Conduct good communication with other kitchen.
Daily information with kitchen team and other kitchen areas.
Customer relations and guest comments.
Maintain food stock and very high food hygiene, energy saving in his outlet.

Minimum 2 years experience in a similar role.
Culinary university degree or similar

Experienced in Western and Asian cuisine
Good communication skills- English and Vietnamese (Optional)
