Techniques
Attends meetings and briefings for kitchen staff
Depending on the hotel, may be asked to receive deliveries, check and store merchandise
Informs the team about cost optimization and the reduction of raw material wastage; tracks implementation
Evolves working methods in line with brand philosophy
Produces and presents the dishes for the section in line with the cooking instructions and processes defined by the hotel and brand
Develops team spirit and motivation by creating a good working atmosphere
Delivers dishes in good time to suit guests&039; wishes
Trains commis chefs, apprentices and interns to a high standard
Ensures that dishes are well presented, of a high standard and at the right temperature
Organizes his/her work and timing to suit fluctuations in guest numbers and special events
Organizes and supervises the work carried out by commis chefs and apprentices in the area under his/her responsibility
Has good working relationships with the other hotel departments
May be asked to carry out some food preparation in the dining room in front of guests, depending on events or how the F&B offer is organized
Hygiene / Personal Safety/ Environment
Check refrigerator and Frozen at all times
Aware of direction of the kitchen equipment and use them correctly
Ensures that the workplace remains clean and the safety of consumable goods by always respecting HACCP regulations
Applies the hotel&039;s security regulations (in case of fire etc)
Respects the instructions and safety guidelines for the equipment used
Ensures that hotel SOPs are followed by self and subordinates
Ensure valid of all food items checked at all times
Ensure all equipment is kept in good working order to avoid guest complaints and bad quality of food
Respects the hotel commitment to the "Environment Charter" (saving energy, recycling, sorting waste etc)
Control and maintain the staff hygiene (hair, shaving, uniform)

Additional certification(s) from a reputable Culinary school will be an advantage
Good reading, writing and oral proficiency in English language
Minimum 2 years of relevant experience in a similar capacity
Ability to speak other languages and basic understanding of local languages will be an advantage
