You will deliver in- room dining experiences that bring the restaurant to the guestroom through place settings and table- side preparations, and execute an industry- leading amenity programme. You will also be responsible to define the resort’s minibar offering, welcome and departure taste, and the selection of fine tobacco available for sale. You will be tasked with bespoke private and destination dining experiences anywhere in the resort, fully on their terms.
You will execute the resort’s unique restaurant, bar and lounge concepts to the last detail and further carve out their unique identities. Under the guidance of the Director of Food & Beverage you will establish each of these venues as a destination of their own, well known beyond region, and recognized for their relevance, service excellence and beverage offering by internationally respected publications and awarding bodies.
You will maintain a detailed job description for each position in your division, and ensure these are regularly reviewed and updated to keep pace with the dynamically changing nature of our business. You will also be responsible to develop, and review policies and standard operating procedures for your division.
You will regularly take time out of your schedule for mentoring and coaching of your direct reports, other high potentials and mixed performers in your division, and put together action plans to attack need areas, and expand on the strengths of the division. You enjoy nurturing talent and providing growth opportunities to your teams. You will set goals and expectations for direct reports and other key personnel using IHG’s global performance management tools.
You will be supporting the development and implementation of the Food & Beverage Division’s annual business plan and medium- term strategies, as well as establishing goals and plans to ensure your division meets its business targets and drives sustainable, profitable growth. You will implement and manage incentive programmes that will help the resort both to generate incremental revenues and to minimise unnecessary expenses.
You will collaboratively bring to life the unique concepts of each of the resort’s restaurants. You will create innovative, immersive and reinvented dining experiences, with storytelling reflective of their respective identities at the heart of your doings. You will ensure that seamless and intuitive service is provided and that guests are guided through culinary exploration from breakfast to dinner. Together with the resort’s graphic designer and the Executive Chef you will create visually appealing menus free of any orthographic errors.
You will play a key role in the Food & Beverage Division, assume full responsibility of daily operations in the absence of the Director of Food & Beverage, and are expected to operate in full compliance with Regent’s brand standards, the Forbes Travel Guide standards, IHG’s brand safety standards, IHG’s corporate and functional strategies, IHG’s regional priorities, IHG’s global policies and procedures, local laws and regulations, industry- standard best practices and in alignment with the long- term vision for the resort: to become one of Asia’s finest destination resorts.
For meetings, conferences, weddings or anything in- between you will develop beyond- baseline, one- of- a- kind programming to facilitate all kinds of occasions. You will coordinate bespoke decorations and set- ups in the resort’s indoor and outdoor facilities, and wow guests through unparalleled service quality and impeccable execution. Once commissioned, food and beverage service aboard the resort’s catamaran will be your responsibility, too, and you will design bespoke on- board experiences for both group and private charters.
You will support the activation of the Personal Havens hallmark in the beach and pool cabanas. In alignment with the brand playbook you will create seasonally- changing programming for elevated bespoke experiences that are multi- sensory, linked to desired emotional states and highlight local discovery.
You will contribute to create an environment that is conducive to achieving the highest levels of guest satisfaction, and deliver an experience that is better and more talked about than the competition. Through visible operational leadership, active trend analysis and hands- on interaction with guests and colleagues you will gain invaluable insights which will help you refine the guest journey and adjust experience concepts, over and over again.
As the Director of Food & Beverage you will hold the number two role in the Food & Beverage Division and together with the Director of Food & Beverage, your direct report, bring to life the Taste Gallery, Regent’s food and beverage philosophy, in all restaurants, bars and lounges, in- room dining, private dining, destination dining, banqueting, and at the pools and the beach, all of which collectively form the Food & Beverage Division.
You will contribute to create a guest journey that is relevant to the Regent guest and their ever- evolving needs. As a stalwart of the Regent brand, you will incorporate the strategic pillars into all touchpoints, and deliver on Regent’s service philosophy and the Forbes Travel Guide standards in daily operations. You will make sure that all service signatures are in place, and that the brand service behaviours are enshrined into the service delivery on the floor.
You are mindful of potential conflicts and will play an active role in managing conflicts and balancing all the different personalities in your division. You will exhibit and promote the attributes of the Regent People Profile in all your conversations and actions. You will ensure your division conforms to IHG’s Values and its Code of Conduct, the local labour code, as well as food safety, occupational health and safety related practices, and the resort’s grooming policy.
You will develop and execute together with your department heads a comprehensive training syllabus tailored to each role in your division, and ensure that all colleagues in your division will at all times provide anticipatory and personalised guest service to help the resort achieve and maintain a Forbes Travel Guide Five- Star equivalent rating.
