Head Bartender

* Administration
- Keep updated and accurate the “Beverage preparation book” (will all recipes and drink costs)
- Suggest some creative and attractive new drink selection
- Monthly inventory
- Daily inventory supervision
- Prepare and issue beverage store requisition
- Work closely with cost control to record the 25 top best seller per outlet as well as the top 25 slow moving items
- Design drinks for the monthly promotion
- Work closely with Pantry and Outlet Manager to fix High Season and Low Season Par Stock
- Work closely with Pantry Manager for training, bar set up organization
- Inform DFB of any major price/ cost increase
- Work closely with beverage store keeper in case of special events, high occupancy… to ensure proper quantities available
- Control beverage store requisition made by the bartenders
* Financial and Revenue Responsibilities
- Monitor the cost linked to the operations
- Is active and work hard to reach the budget
- Communicate the financial target (budget) to the team
* Training and Human Resources Management
- Issue training checklist for all given training
- Train the team on a regular basis and in accordance to the training plan
- Develop trainings in accordance to the operational needs
- Establishes effective employee relations and maintains the highest level of professionalism, ethic and attitude towards all hotel guests, clients, heads of department and employees
- Give regular positive and negative feedbacks to each team member in a constructive way
* Guest Service Responsibilities
- Work hard to satisfy any guest requests
- Introduce and up sell any special events / promotions
- Ensure full guest satisfaction at any time
- Gather guest feedback and report to Outlet Manager and supervisors
- Develop customer loyalty and recognition
* Operational Responsibilities
- Report any guest complains to Outlet Manager
- Follow hygiene and safety rules in the entire process of the drinks preparation
- Manage the entire bar team along with the outlet manager
- Ensure bar display is matching the Sofitel Brand Standards
- Ensure an extremely detailed presentation of the drinks
- Ensure smooth and efficient production of the drinks at any time
- Ensure excellent communication between bar team and service team
- Handle and follow up on any guests complains linked to beverage quality
- Implement bar cleaning plan and ensure strict implementation
- Follow up that all given training are fully followed by the staff
- Ensure proper bar set up as well as working station organization (must be ergonomic)
- Know and ensure full follow up on the Sofitel brand standards
* Meetings to attend/ lead
- Attend be monthly promotion meeting
* Miscellaneous
- All ambassadors are required to comply with every reasonable request from their hierarchical supervisor(s) within an amount of time that it takes to comply under normal circumstances.
- All ambassadors may be assigned to other duties in the hotel as and when required by business levels.

- Training capabilities and implementation of new menus
- Hygiene and HACCP standards
- Good ranking in bartending competition is a plus
- Deep knowledge of Spirits, Beers, Wines
- Good guests relations skills
- Certifications in learning of spirits, wines are a plus
- Pro- efficiency and creativity into building a cocktail program
