Basic Function:

To comply with beverage department standard operating procedures and to conduct yourself in accordance with bartender Do’s & Don’ts guidelines. Bring into effect the superior product and service expected for our guests in accordance with policies and procedures adopted by the hotel.
To serve our guests in accordance with company standards of food and beverage quality, presentation and sanitation, in a gracious and professional manner.
To serve our guests food and beverage, waiters and waitresses via the service bar and front bar.
Duties and Responsibilities:
Night bartender will be responsible for bar security in his area of responsibilities.
Management reserves the right to make changes to this Job description at its sole discretion and without advance notice
Accept drink orders from food and beverage waiter/waitresses in proper calling order via Micros to keep service bar at optimum level of service for our guests.
Total compliance with conditions as outlined in beverage service personnel work agreement.
Perform any reasonable requests made by management which are not life- threatening or against the law.
At no time leave the bar area unless properly relieved by a manager, supervisor or another bartender.
All cocktails are to be made in accordance with company standard beverage manual and company bar guide, using the standard jigger at all times.
Set up bar- unlocking liquor, icing, glassware, juices and garnishes set- up.
Red- line all drink orders, checking for correct number of drinks and correct pre- ring through Micros dupes; no drinks to be made without pro- rung guest check.
Day bartender will receive and check liquor against previous night’s requisitions. Any discrepancies with the receiving order should be brought to the attention of the Beverage Manager. Night bartender will requisition liquor to bring pars up in accordance with par sheets
Assist night bar attendant with mopping floors, cans and general sanitation to include: speed rails, counters, melting ice in bins, and wiping all stainless.
Have available the company beverage manual, beverage department standard operating procedures, sanitation checklist.
