The Hygiene Manager acts as the guardian of food safety, minimizing risks of contamination and ensuring a safe dining experience for all guests.
The Hygiene Manager is responsible for implementing, monitoring, and maintaining hygiene and food safety standards across all food and beverage operations. This includes developing sanitation protocols, training staff, conducting inspections, and ensuring compliance with local health regulations and international food safety certifications (e.g., HACCP, ISO 22000).
Hygiene Manager is safety and health professional who inspects and supervises workplaces to ensure that workers and the guests are protected from dangerous or unsafe conditions. Hygiene Manager needs to make recommendations about how hotel might operate in a safer manner and is responsible for set up Melia Hygiene Standards 100 % and encourage others to follow accordingly.
Oversees, directs and drives all aspects of HACCP and food safety management system which covers the following departments:
Culinary, F&B service
Fitness, Spa, Kids Club, Pool bar
Purchasing and Receiving
Housekeeping
Stewarding
Butlers & The Level Floor
Conducts weekly hygiene walk through all the F&B departments.
Implements food safety management system for the Hotel
Regular inspection of all food production and preparation areas which covers kitchen, storage areas, restaurants, receiving area, staff change room, garbage room and chemical store.
Ensures Food safety system or HAPPC system is implemented and maintained in accordance to all procedures and work instructions established
Conducts investigation in case of any food poisoning cases
Implements food safety system as per Hotel Brand Policy
Visiting, conducting Hygiene Audit by supplier one’s per month.
Conducts monthly Hygiene Meeting with Hygiene Team & GM.
Identifies the severity of risks and controls it
To complete and perform all work of the other tasks assigned by the Executive Chef.
Regularly conduct Hygiene Training for Food Handlers.
Initiates proper control measures for any kind of hazards related to food safety
Cooperates with local health authority if need it.
Regularly inspect the raw material market in the city.
Serves as Hotel representative related to food hygiene and safety
