OPERATION MANAGER

JOB DETAILS (DUTIES & RESPONSIBILITIES)

• In cooperation with the Sales & Marketing Dept., coordinate with all large group meeting/banquet planners their specific group requirements with the services and facilities offered (proposals, contracts, estimated and actual function statements)

• Oversee staff professional attitude and adherence to Company prescribed grooming and uniform standards; teamwork relations with co- workers and management
• Public Relations and entertainment of potential and existing customers, business partners
• Responsible for continuous staff training and development
• Assure compliance to food (Kitchen) and beverage (bars) control policies

• Establish excellent Customer Relations Management to ensure guest satisfaction and repeat business

• Timely analysis of F&B prices in relation to competition

• Achievement of budgeted food sales, beverage sales, labor costs and profitability

• Overall upkeeping of operational facilities in compliance with the HACCP standards.
• Assure completion of F&B staff duty rosters while maintaining a labor cost below the % as dictated by the GM and assuring adequate and consistent levels of service
• Institute Quality Assurance Measures that guarantee consistency in compliance with food and beverage QUALITY & SERVICE standards

• Bachelor Degree in Business Administration, Tourist/Hospitality Management, or equivalent relevance to job functions

• Experience: At least 10 years in F&B Department:

 Implementation of HACCP guidelines
 Kitchen Operations Management
 Supplies and Stocks Management
 Culinary Management
 F&B Service Operations

• Must have excellent knowledge of food & beverage products including

 Wines

 Vietnamese, Asian, Western, and International Cuisine

• Extensive knowledge on F&B Financials & Cost Control Management

• Knowledgeable on Stock Movement & Control Management

• Knowledgeable on POS System design appropriate to company operations

• Must have Computer skills on use of Microsoft Office (Windows, Word, Excel, Outlook, Powerpoint)

• Strong multiple tasking skills with the ability to meet critical deadlines

• Must have refined skills in public relations

• Substantial sales and marketing expertise

• Strong problem solving

• A positive attitude team centric attitude
